Filter coffee in South India is coffee plus chicory — that's what gives it the deep, slightly bitter edge that straight espresso doesn't quite replicate. BAR put both into this bar, along with 70% cacao from Idukki.

If you grew up drinking filter kaapi from a steel tumbler, the flavour here will register immediately. If you didn't, it still works: the roasted coffee and chicory cut through the richness of the dark chocolate without either one dominating.

Idukki is Kerala's hill district — most people know it for cardamom and pepper. It also grows cacao, and BAR sources from there directly. At 70%, the base chocolate has enough bitterness to hold up against the coffee. The bar doesn't taste sweet.
